Effect of Vacuum Packaging on Microbiological Quality of Meatless Raw Meatballs

Abstract
Meatless raw meatballs (Meatless cig kofta) is a food produced in Turkey by removing raw meat from the composition of traditionally produced cig kofta and using bulgur, tomato paste and various spices. It has become a popular food product that has been widely produced and consumed in recent years. Although it is more durable than traditional raw meatballs because it does not contain raw meat, it still carries microbial risk and can be easily spoiled because it is not made durable by heat treatment. Therefore, it is important to reduce the risk of contamination by using raw materials with low microbial load and reducing the production steps. In this study, the changes in the microbiological content of meatless raw meatballs produced by applying partial heat treatment to raw materials were investigated during storage with vacuum and non-vacuum packaging. Total aerobic mesophilic bacteria (TAMB), coliform bacteria, Escherichia coli, Staphylococcus aureus, and yeast - mold counts were performed on the first day of production (day 0) and on the 7th, 14th, 21st, and 28th days of storage. The counts of TAMB, coliform bacteria, Staphylococcus aureus, and yeast - mold were found in the range of 5.30–5.76, 0.00–1.32, 0.8–1.66, and 0.00–2.27 log cfu/g, respectively. Escherichia coli was not detected at all. It could be concluded that vacuum and non-vacuum packaging did not have a significant effect on the microbiological quality of meatless raw meatball samples. Moreover, the changes in microbiological counts in +4oC storage did not show a significant increase until the 28th day and were at an acceptable level.
Etsiz çiğ köfte Türkiye'de geleneksel olarak üretilen çiğ köftenin bileşiminden çiğ et ilavesi çıkartılarak, bulgur, salça ve çeşitli baharatlar kullanılarak üretilen bir gıdadır. Son yıllarda yaygın olarak üretilen ve tüketilen popüler bir gıda ürünü haline gelmiştir. Çiğ et içermemesi dolayısıyla geleneksel çiğ köfteye göre dayanıklılığı daha fazla olmakla birlikte ısıl işlemle dayanıklı hale getirilmemesi nedeni ile halen mikrobiyal risk taşıyabilecek ve kolayca bozulabilecek nitelikte bulunmaktadır. Bu nedenle mikrobiyal yükü düşük hammadde kullanımı ve üretim basamaklarının azaltılarak bulaşma riskinin azaltılması önem taşımaktadır. Bu çalışmada hammaddelere kısmi ısıl işlem uygulanarak mikrobiyal yük ve tek basamaklı bir yoğurma işlemi uygulayarak da bulaşma riski azaltılmış yöntemle üretilmiş etsiz çiğ köftelerin vakumsuz ve vakumlu ambalajlama ile muhafazasında mikrobiyolojik içeriğinde meydana gelen değişim incelenmiştir. Üretimin ilk gününde (0. gün) ve depolamanın 7, 14, 21 ve 28. günlerinde etsiz çiğ köfte örneklerinde toplam aerobik mezofilik bakteri (TAMB), koliform bakteri, Escherichia coli, Staphylococcus aureus ve maya-küf sayımları yapılmıştır. Vakumsuz ve vakumlu etsiz çiğ köfte örneklerinde tüm analiz zamanlarında, TAMB, koliform bakteri, Staphylococcus aureus ve maya-küf sayıları sırasıyla 5,30-5,76, 0,00-1,32, 0,81-2,66 ve 0,00-2,27 log KOB/g aralığında bulunmuştur. Hiçbir örnekte Escherichia coli belirlenmemiştir. Vakumlu ambalajlama ile vakumsuz ambalajlamanın etsiz çiğ köfte örneklerinin muhafazasında mikrobiyolojik kalite üzerine önemli bir etkisinin olmadığı, +4oC’de muhafazada mikrobiyolojik sayılardaki değişimlerin 28. güne kadar önemli bir artış göstermediği ve kabul edilebilir düzeyde olduğu sonucuna ulaşılmıştır.
